We are a group of people dedicated to bringing a better and different pizza experience to Cleveland. What we ended up with is a sauce that truly shines above the pizza. We couldn't have imagined the cliché that the secret is in the sauce. Exhausted and tired, we found ourselves making sauce once again, but we botched the recipe and were too weary to start over. It was well past midnight when we decided to put it in the cooler and revisit it in the morning. The next day, the sauce was the best we ever had, and we couldn't stop laughing: Did we even remember what we did? We wrote down our thoughts and tried it again, though the recipe didn't even make sense. The proportions seemed way off from every Italian cookbook, but we re-made it anyway, and the rest is culinary history. A new sauce created in Cleveland that changes the course for pizzas in Cleveland and maybe even the country. To maximize the sauce's potential, we merged a true Chicago-style deep dish with the caramelization of a Detroit-style pizza. It's not Chicago, it's not New York, it's not Detroit. It is, Cleveland. Rustic, hearty, and above all else, wonderfully delicious. We also created a thin crust that takes advantage of our sauce, spread to the very edge of the cracker-thin crust to maximize flavor throughout the thin crust pizza. Generous amounts of cheese and all the usual toppings are included, and the pizza is cut into squares due to the nature of the crust. We can't decide which version we feel is better. We will never cut corners and will remain true to our beginnings as a medieval restaurant in Ohio, which reflects the spirit of medieval bars.
